Watermelon (Citrullus Lanatus) is of the botanical family Curcurbitaceae and is a cousin to the cucumber, pumpkin, and squash. In the 1800s, Watermelon growers would defend their patches from pillagers by randomly poisoning and even electrically booby-trapping their precious melons. We like our Watermelon to have a Brix of about 10-12, but this number can widely fluctuate depending on the seasons. We think Watermelon should be more known for its high levels of lycopene, citrulline, and B vitamins than for their sweetness. Being 96% water, the juice is certainly more fun to hydrate with than plain H2O.
